Brrr, it’s suddenly really really cold. A good excuse to make some soup, the perfect comforting winter warmer lunch option …

In my eyes, Vichyssoise is a French classic, although I understand there is some debate over whether it is French or American in origin. It is normally served cold but January isn’t really the season for cold soups and it’s also divine served hot. The classic recipe calls for plenty of butter and a ‘vat’ of cream, but I guarantee you won’t even notice that these ingredients are missing. You really don’t need them. The softly cooked leeks and potato give a natural luxurious velvety smoothness so why add butter or cream? Plus, who wouldn’t love a fantastic flavoured soup with just 4 ingredients as its base? It really is one to file under ‘simple’.

Spinach, Cheese and Spring Onion Muffins

I love savoury muffins and always have a few stashed in the freezer. They are delicious for breakfast or as a side with soup for lunch. These are so easy to make and can be whipped up and in the oven in minutes.

Tips:

A 120g bag of washed baby spinach makes about a half a cup when wilted in a frying pan with a little bit of butter or oil. I also season it lightly with salt and pepper.

You can also use frozen spinach. Just make sure it is fully squeezed of excess water or it will make the muffins stodgy.

Take them out of the muffin tin about 5 minutes after they come out of the oven as leaving them in the tin can make them soggy. Run a palette knife around the edges and tip onto a cooling rack.

I’m a strong advocate for throw something together using whatever you can find and hope for the best… And sometimes this fails miserably and I end up with a distasteful look on my face while I scoff down something less than mediocre. Occasionally however, it comes together nicely and that’s exactly what happened with tonight’s dinner. It’s a super easy and healthy vegetarian dish that takes no time at all. Read the recipe below to transform a few ingredients -that you probably have on hand already- into this baked delight in less than half an hour. Feel free to add any vegetables you have on hand; I would love to add spinach next time. This would also be great served with a side salad or some steamed greens.

Ingredients:

1/2 white onion (diced)

Hand full of sliced mushrooms (I used button)

4 eggs

Mixed Mushroom & Tofu Soup

Egg Stuffed Mushroom

Because I Scratched off the black gills of portoballo mushroom. Didn’t want to throw them away. So I came up with this soup.

  1. heat a pan. Saute 1 chopped garlic.
  2. add in black gills. The whole kitchen will smell great.
  3. add in shiitake mushroom slices. Stir fry a bit.
  4. pour in 1 cup stock. Also add in brown mushroom. Bring to boil then turn to low heat and simmer for 5 mins.
  5. cut in tofu cubes. Simmer for  another 5-8 mins.
  6. season with salt and garnish with chopped spring onion.

Very easy and nice soup.

Have you ever had days when you oke up and craved to gorge into one particular thing? No? Lucky you. But sadly, last Saturday was exactly that kind of a day for me, when I woke up craving for a hearty pesto spaghetti.

I am a person who generally doesn’t order in food. I prefer going out to eat, or eating home cooked food. Looking at the gloomy, wintry weather outside, I promptly dismissed the thought of going out and started ransacking my pantry instead. Well, there was boneless chicken in the freezer and also a brand new box of spaghetti, ready to go wiggly, right in front of my eyes. All that remained now were the things needed for a pesto sauce.

Once upon a time, I was a kid, and my affair with cooked greens was non-existent. I simply refused to eat them. They just didn’t “smell” nice.

This dish is not all green but still I refused to eat it. It involved cooked greens. No amount of begging could make me even try it. My sister ate it with yogurt. I could not. No spanakorizo for me please… Until the day I harvested my first spinach from my own small vegetable garden and wondered what to do with it 😉 .
